A number of modern
factors have resulted in an unprecedented rate of under-functioning
thryoid conditions in North America today. Foremost among the
reasons are:
1) Consumption of soybean oil and soy products
(soy has proven thyroid suppressing properties). This is why
soybeans are used so extensively in feeding livestock, as they
cause reduced metabolism and more rapid weight gain. On the
contrary, the lauric acid in coconut oil stimulates thyroid
function. In the 1940's, farmers tried giving their livestock
coconut meal as a cheap food, and found that their animals became
lean rather than fatter.
2) The fluoridation of water supply, toothpastes
and dental treatments (fluoride displaces iodine in the body).
3) The devitalization and depletion of soils
due to modern chemical farming practices resulting in greatly
reduced trace mineral content of our food. This has a marked
negative effect on thyroid function.
Besides causing a sluggish metabolism and weight gain, an underactive
thyroid leads to fatigue, dull, dry hair, poor complexion, and

Extra Virgin Coconut Oil by Evergreen Botanicals
Extra
virgin coconut oil has been shown to support and stimulate
thyroid function (as opposed to soybean oil which
suppresses thyroid function). Finally, after years of cover-up
by the commercial food industry, the evidence is coming to
the forefront how polyunsaturated oils actually contribute
to high cholesterol, arterial build-up, free-radical damage,
and many other health problems. Soybean oil in particular
slows down metabolism and leads to weight gain. All polyunsaturates
oxidize (go rancid) quickly and cause free radical damage
that accelerates aging.
On the contrary, extra virgin coconut oil is very
stable (it will not go rancid even when kept at room
temperature for a year). The lauric acid it contains has been
shown to have numerous health benefits, most important of

Extra virgin coconut oil has been shown to be more effective
than regular, non-virgin coconut oil. Extra virgin coconut
oil can be produced by 3 different methods.
The best way is the "wet-milled" method.
In this method, the meat of fresh, green coconuts is removed
and within 2 hours is pureed into a slurry, then put into
a centrifuge by which the oil is spun out (a bit like a cream
separator). There is no heat at any stage. The oil has a tremendously
fresh coconut smell and taste. All enzymes are preserved.
Our extra virgin coconut oil is produced using the
"wet-milled" method.
The majority of virgin coconut oils are produced by heat drying
the fresh meat of green coconuts, then cold pressing the dried
meat. The drying temperatures vary from 40-80 degrees celsius
depending on the manufacturer. Heat drying the coconut before
pressing gives an inferior oil with less enzymes.
The third method, which is the way coconut oil was made for
centuries, is by fermentation. Care must be taken that the
end product does not taste fermented and that the moisture
content is low enough to ensure long shelf life.
Extra virgin coconut oil is a highly recommended part of a
thyroid stimulating program.
Another important benefit of extra virgin coconut oil is its
ability to lower bad cholesterol (LDL) and raise good
cholesterol (HDL). So rather than contributing to
heart disease and arterial build up, virgin coconut oil aids
coronary health.
Coconut oil also has wonderful external uses as an anti-oxidant
skin moisturizer that quickly absorbs into the skin.
It helps protect from sun exposure and has
been proven effective for a host of skin problems including
eczema, psoriasis, acne,
